Ingredients

5 Australian Lamb Shanks 

3 tbsp vegetable oil  

2 onions, finely chopped  

3 cloves garlic, crushed  

1 tsp ground cinnamon  

1 tsp ground cumin  

1 tsp ground coriander  

1 tsp ground black pepper  

1 tsp ground cardamom  

1 tsp ground turmeric  

2 medium tomatoes, peeled and finely chopped 

1 tbsp tomato paste  

1 medium potato, cut into large cubes  

1 medium carrot, thickly sliced  

200g pumpkin, cut into medium cubes  

2 medium zucchinis, thickly sliced 

1 green bell pepper, thickly sliced 

¼ cup coriander leaves, chopped 

To Garnish 

Parsley leaves, finely chopped 

Method

  • Heat oil in a pressure cooker, add the lamb and cook for 2-3 minutes over medium heat. 
  • Add all the spice powders, tomato paste, garlic and cook with occasional stirring for 2-3 minutes.
  • Next, add chopped onions and two cups of water. Close and cook for 45 minutes to 1 hour until the meat is almost tender.
  • Next add potato, carrot, pumpkin, zucchini, bell pepper, tomatoes, and coriander leaves. Cook for another 10-15 minutes or until vegetables are cooked. 
  • Once cooked, transfer to a serving plate and garnish with parsley leaves. 
  • Serve with Arabic bread or cooked rice.
